AUTHOR: Andiswa Skweza

INGREDIENTS NORWEGIAN SALMON RECIPE

2 to 4 Norwegian Salmon Pieces

1 Tablespoon Lime infused Olive Oil

1 Tablespoon Sesame Oil

3 Tablespoons Mirin

3 Tablespoons Soy Sauce

2 Tablespoons Rice Wine

2 Tablespoons Brown Sugar

1 Tablespoon Honey (optional)

Salt

1\2 Teaspoon Juice from Fresh Ginger

Dill, for garnish

 METHOD
  1. In a shallow dish (I used a small casserole dish) mix the oils, mirin, rice vinegar, salt, sugar, soy sauce, honey (see note) and ginger juice. Then add 2 pieces of salmon (at first, marinate the remaining while cooking the first 2), and marinate the salmon for 5 minutes on each side.
  2. Meanwhile, heat a medium frying pan on the stove on medium heat. Brush the pan with olive oil.
  3. Cook the salmon in the hot pan (I cooked 2 pieces at a time) for 2 1/2 minutes and then turn it over, and cook for another 2 1/2 minutes, the add 3 tablespoons of the marinade, and cook for 1 more minute.
  4. Remove the salmon and add the rest of the glaze in the pan and let it simmer for about 2 minutes while you keep stirring.
  5. Serve with rice and pour the glaze over the salmon and garnish with dill.
  6. The recipe serves 4, enjoy:-)
Note: I added honey for extra sweetness for my chilli rice. if you
will be serving this with plain rice, I would advise you don't add
the honey. taste the glaze first, if it's too sweet for you,
add an extra tablespoon of soy sauce or add salt.
