NORWEGIAN SANDWICHES WITH SALMON AND SPINACH – INSTRUCTIONS
4 servings
4 slices white bread cut into squares
40 g butter [1.4 oz.]
4 slices of smoked salmon
3-4 eggs
4-5 tablespoons of water and cream
salt
white pepper
1 tablespoon margarine
250-300 g spinach [8.8 oz. – 10.5 oz.]

40 g margarine[1.4 oz.]

some lettuce leaves
Clean the spinach. Blanch it in plenty of water ad a little salt. Rinse in cold water. Just before serving let it simmer in a tablespoon of butter. For the scrambled eggs mix egg, water, cream and spices. Melt the margarine in a frying pan or saucepan, add the egg mixture and let it harden over low heat. Stir occasionally. Fry the bread quickly. Add scrambled eggs on one half of the bread slices, spinach on the other and a bent or rolled salmon slice in the middle. Garnish with lettuce and dill . Make them smaller, and they work well as appetizer along with a few other varieties. Otherwise, they may also be served as a small dish alone. This delicate sandwiches can be made cheaper, yet retain its character, if the salmon is replaced with some other sort of smoked fish.
