Here’s quick and easy Norwegian Buns Recipe. Originally the recipe was a dash of salt, a cup (aka coffee cup) of sugar, etc. My grandmother had macular degeneration so much of how she baked was by feel. And this is a half recipe – The original recipe would have been double – I knew my kitchenmaid wouldn’t be able to handle that!

Norwegian Buns Recipe

3 cups milk

1 cup water

3/4 cup sugar

2 packs of yeast -I used regular as I didn’t think grandma had access to “quick” yeast

1 tbsp salt

6-8 cups flour

Norwegian Buns Recipe Instructions

Scald milk. Remove from heat and add water and sugar. Let sit until mixture is between 90-120 degrees. Add 1 cup flour and yeast and let sit for 10 minutes. Stir in 1 cup of flour and salt and attach paddle to kitchenaid mixer. Add ½ cup of flour at a time until 6 of the 8 cups are in the mixer. Remove paddle and attach dough hook.

Add remaining flour ½ cup at a time and knead for 10 minutes. Transfer to oiled bowl and set to prove for 45 minutes to an hour or until doubled in size. Punch down and divide into balls. I weighed them-the rolls in the picture were 2.5 oz of dough.

Roll into balls making sure any seams are on the underside. Place on pans and cover and let rise another 30-45 minutes . Bake at 350 for 15-20 minutes. I took a stick of butter and topped them while they were still hot.

So yummy!

NOTE: try this: Sliced in half, buttered and with homemade raspberry jam or with nekkelost cheese.
