NORWEGIAN-CHRISTMAS-COOKIES

Sandnuts are in many Norwegian families one of the seven sorts of cookies one bakes for Christmas. It is a light cookie with porous consistency that melts in your mouth. Make the sandnuts together with your family, for homemade is always best. The recipe gives about 90 small cookies.
Ingredients
250 g [9 oz] butter
150 g [5,3 oz] sugar
2 tsp vanilla sugar / vanilla
1 small egg
2 teaspoons baking powder
500 g [17,5 oz] potato starch
125 g [4,4 oz] flour
[1] Set the oven to 180 C / 355 F and cover a baking sheet with baking paper.
[2] Whip the egg. Whip butter and sugar airy and white and stir in the whipped egg.
[3] Add the dry ingredients and knead until you get a nice and firm dough
[4] Roll the dough into a long length and cut it into small and equally large items. Roll out small balls and place them on the baking sheet. Place about 20 on each sheet. Flatten each ball slightly with a fork.
[5] Bake the cookies in the middle of the oven at 180 C /355 F for about 10 minutes. The sandnuts should still be light in colour when finished. Cool the cookies on the baking sheet and store in a tight tin or jar with a lid. SOURCE HERE >
